Ingredients

  • 1 cup Jasmine or Basmati Rice
  • 2 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon oil
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • 1 teaspoon grated ginger
  • 1 tablespoon curry powder
  • 1 tomato (chopped)
  • 1 cup diced chicken
  • 1/2 cup coconut milk

Steps

  1. Rinse the rice until the water runs mostly clear.
  2. Add rice, water, and salt to a pot. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Turn off heat and let sit (covered) for 5 minutes. Fluff with a fork.
  5. Heat oil in a pan over medium heat.
  6. Add onion, garlic, and ginger. Sauté until soft (about 3–5 mins).
  7. Stir in curry powder and cook for 30 seconds.
  8. Add tomatoes and cook until soft and saucy.
  9. Add chicken and coconut milk.
  10. Simmer for 10 minutes, stirring occasionally.
  11. Taste and adjust salt, pepper, or add spices accordingly.
  12. Scoop fluffy rice onto a plate or bowl and ladle the curry over the top. Garnish with cilantro if desired. Enjoy hot!
