Ingredients

- 1 cup Jasmine or Basmati Rice
- 2 cup water
- 1/2 teaspoon salt
- 1 tablespoon oil
- 1 small onion (diced)
- 2 garlic cloves (minced)
- 1 teaspoon grated ginger
- 1 tablespoon curry powder
- 1 tomato (chopped)
- 1 cup diced chicken
- 1/2 cup coconut milk
Steps
- Rinse the rice until the water runs mostly clear.
- Add rice, water, and salt to a pot. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Turn off heat and let sit (covered) for 5 minutes. Fluff with a fork.
- Heat oil in a pan over medium heat.
- Add onion, garlic, and ginger. Sauté until soft (about 3–5 mins).
- Stir in curry powder and cook for 30 seconds.
- Add tomatoes and cook until soft and saucy.
- Add chicken and coconut milk.
- Simmer for 10 minutes, stirring occasionally.
- Taste and adjust salt, pepper, or add spices accordingly.
- Scoop fluffy rice onto a plate or bowl and ladle the curry over the top. Garnish with cilantro if desired. Enjoy hot!
