Ingredients

  • 4 ears of corn (husked)
  • 1/4 cup Mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1 tablespoon fresh cilantro (chopped)
  • 1 lime (cut into wedges)
  • 1 tablespoon melted butter

Steps

  1. Heat your grill or grill pan over medium-high heat.
  2. Lightly brush the corn with butter, if desired.
  3. Grill the ears for 10 minutes, turning occasionally, until charred and slightly golden on all sides.
  4. In a small bowl, combine mayonnaise and sour cream.
  5. While the corn is still warm, slather it generously with the mayo and sour cream mix.
  6. Sprinkle with cotija cheese, a dash of chili powder, and chopped cilantro.
  7. Serve each ear with a lime wedge for squeezing over the top.
